We are very thankful to the Greeks for giving us the culinary wonder that is tzatziki. This creamy and flavorful sauce can be served as a dip as well. It pairs nicely with grilled meats and vegetables and can be enjoyed all year round. It is also delicious on top of a crisp pita chip! This is a classic recipe to have in your go-to arsenal. Serve tzatziki as a condiment or appetizer at your next party and watch it disappear quickly.
2 cups whole milk Greek or Middle Eastern yogurt or sheep’s milk yogurt (The thicker the better, if it’s regular yogurt with excess water, drain it for a few hours in a fine mesh sieve)
1 large or 2 small Persian cucumbers, grated and squeezed of excess water
2 teaspoons lemon juice, to taste
1 tablespoon finely chopped fresh dill
1 large garlic glove, finely chopped or pressed
1 teaspoon coarse salt to taste
In a medium bowl, combine all of the ingredients. Allow to sit for at least 1 hour before serving.
