Listen Pumpkin, you’re great and all but we’re really into Butternut Squash right now! We are geeking out over it’s delicious flavor and texture when roasted just right. It’s one of the very best things that comes with this time of year. Instead of just roasting a squash and calling it good, dice it up and add it to this phenomenal salad. It’s a meal within itself! We used a beautiful bowl and plates from Bauer Pottery here in LA. They make for the most festive serveware!
Brilliant Butternut Squash Salad
2 tablespoons olive oil
2 tablespoons fresh lemon juice
1 pound arugula (about 3 bunches)
1/2 cup crumbled goat cheese (2 ounces)
1 cup diced roasted beets
1 1/2 cups roasted butternut squash
1/4 cup toasted pepitas
2 grilled chicken breasts (cubed)
1/2 cup sliced red onion
In a Bauer Pottery salad bowl, add arugula, beets, squash and grilled chicken.
Sprinkle goat cheese, pepitas and onion on top of other ingredients
Whisk together olive oil and lemon juice
Drizzle dressing all over top of salad
Serve and enjoy
