Bourbon Pecan Pie

Let’s get into those early winter vibes with a warm bourbon pecan pie this week!  We were just thinking about how comforting a warm pecan pie is and what a perfect dessert it is for this time of year.  Whether you’re sitting in front of your fireplace in the snow up just snuggling in for a night of Netflix binging, this dessert will remind you that there can be goodness found in everything.  The slight hint of bourbon will also help in melting any holiday stress away!  What do you say, pecan pie and chill?

Ingredients

  • Pie Crust (One 9 inch pie or three mini pies):
  • 1 1/4 cups all purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon sugar
  • 4 ounces unsalted butter
  • 3 to 4 tablespoons ice water
  • Filling:
  • 3 eggs
  • 1 cup dark corn syrup
  • 1/2 cup brown sugar
  • 2 ounces butter, melted
  • 2 tablespoons bourbon
  • 1 1/4 cups pecan halves or pieces

Pie Crust:

Combine dry ingredients.

Cut in butter.

Add water until the dough just holds together. Divide in half and wrap in plastic. Form into discs. Refrigerate 1 hour.

On a lightly floured surface, roll pie crust into a circle and place into your pie pan. Crimp edges and dock the bottom. Blind bake until lightly golden brown, approx. 15 minutes.

Filling:

Beat the eggs with a whisk. Combine remaining ingredients.

Assembly:

Pour into shell, place on sheet pan.

Bake until set, about 25 to 30 minutes.

Cool at least 2 hours.

Serve warm with lightly sweetened whipped cream if desired.
