When was the last time you prepared a truly special breakfast at home? We thought it was the perfect time of year for Chef Briana’s Banana Foster Stuffed French Toast. The warm caramelized bananas falling down the buttery, freshly grilled French Toast, stuffed with sweet cream cheese will have you wondering why you didn’t make this sooner! If you think it’s too much sweet, balance out your plate with a side of bacon or sausage for the ultimate savory pairing.
Banana Foster Stuffed French Toast
4 slices of day old bread (chef recommends brioche)
2/3 c milk
1 Tb sugar
½ tsp vanilla
pinch of nutmeg
½ Tb butter
Cream Cheese Filling
1/2 c cream cheese, room temp
2 Tb butter, room temp
¼ c powdered sugar
½ tsp of orange zest
½ tsp vanilla
Banana Foster Topping
2 large bananas sliced into rounds
¼ c pecans, toasted and ruff chopped
2 Tb butter
½ c brown sugar
2 Tb maple syrup
2 Tb rum
½ tsp cinnamon
pinch of salt
For filling, blend all of the ingredients in a bowl with a paddle attachment or hand mixer. Spread the filling in between two slices of bread, making two sandwiches. Set aside.
Heat up a griddle or saute pan over medium heat.
In a separate bowl mix eggs, milk, sugar, vanilla and nutmeg together.
Dip sandwich in custard and allow to sit for 15 seconds. Flip to the other side and repeat the process. Once both are completed add butter to pan, using a spatula gently stir butter around. Add french toast to pan cook on both sides for about five minutes or until golden brown.
In a separate pan, over medium-low heat melt additional butter. Then add brown sugar, maple syrup, cinnamon and salt. Using a whisk mix together. Then carefully add rum, bananas and pecans. Cook until bananas are slightly tender, approximately 5 minutes. Pour topping over french toast and serve warm.
